1 lb regular ground beef
1 onion, chopped fine
2 chopped garlic cloves
1 ½ cups canned cream corn
Salt and pepper
1 tbsp. parsley
¼ tsp. thyme
4 mashed potatoes
3 tbsp. corn oil
Put the oil into a sauté pan placed over medium heat. When oil is hot, add onions and cook 3 mins., stirring constantly. Add ground beef, garlic, thyme and parsley. Increase heat to high and cook the mixture for 5 minutes. Season with salt and pepper. Remove pan from the stove. In a buttered baking dish, place a layer of meat, a layer of creamed corn and then another layer of meat. Top with mashed potatoes. Place Shepherd’s Pie in preheated 400 F oven for 20 mins. Serve with tomato sauce.
