Picnic at the Pond

With Spring fast approaching, it’s time to start thinking about fresh recipes to use in the coming months, especially ones that can be made on special holidays or taken on picnics.  Here are a few original pineapple-inspired recipes, from Kevin Sullivan’s Designscapes book, Beyond Green Gables.  Kevin recommends these dishes as the perfect menu for a picnic at the pond.

Baked Ham with Pineapple

Slice smoked ham, 1-inch thick
1 ½ teaspoons mustard
¼ cup brown sugar
1 tablespoon vinegar
1 cup milk
Pineapple slices

Place ham in baking pan.  Mix mustard, sugar and vinegar; spread over the ham.
Pour in milk; bake at 350F about 1 hour or until ham is tender.  Place pineapple on ham; continue baking until pineapple is lightly browned.  Sliced oranges, apples, canned peaches or apricots may be used instead of pineapple.  Serves 4.

Note: A 2-inch slice may be baked on a rack without the milk for 1 ½ hours.  Remove the rind before serving.  Slice thinly.  Serves 8.

Pineapple Medley Al Fresco

1 can crushed pineapple
1 cup boiling water
1 small package lemon gelatin
6 ounces cream cheese
½ pint whipping cream
¼ cup carrot, grated
½ cup celery, diced
¼ cup green pepper, chopped
1/3 cup walnuts

Dissolve cream cheese in boiling water.  Drain pineapple from can, reserving juice.  Combine gelatin and pineapple juice.  Add water/cheese mixture.  Stir until dissolve.  Whip cream and fold into gelatin mixture.  Add remaining ingredients.  Chill until firm.

    That looks heavenly- we were blessed with snow AGAIN! I have been looking for a reliable recipe for raspberry cordial. Maybe, I can talk the hubby into an early Mother's Day gift...
