The Ceremony of Afternoon Tea

Now that the warm weather is approaching, here are some delicious dessert recipes that can be enjoyed in a garden tea party.  These old-fashioned recipes were taken from Kevin Sullivan’s Designscapes book, Beyond Green Gables.

Foundation Drop Cookies

1 ¼ cups butter or fat
1 cup brown sugar
1 egg
2 cups flour
1 tsp. soda
1/8 tsp. salt
Flavouring

Cream butter thoroughly; gradually add sugar and cream until fluffy and smooth. Add egg and beat well, add flavouring.  Sift flour, soda and salt into butter mixture.  Mix until thoroughly blended.

Drop from a tsp. onto a lightly greased cookie sheet.  Bake at 350 F until lightly browned, cool on a rack.  Makes 6 dozen cookies.

Almond Crescents

1 cup butter
½ cup icing sugar
1 tsp. vanilla
1 tbsp. cold water
2 cups pre-sifted all purpose flour
1 cup finely-ground almonds
Icing sugar for top

Cream butter and sugar together until fluffy.  Add vanilla and water.  Stir in flour and ground almonds gradually.  Mix well and roll into crescents.  Bake at 350 F.  After crescents have cooled, sprinkle icing sugar on top.
