Victoria Day Recipes

This coming Monday, May 23th, is a holiday for Canadians, as it is the celebration of Queen Victoria’s birth.  It is also considered the unofficial “kick-off” to the beginning of summer.  So here are a few recipes from Beyond Green Gables that will add to a memorable barbecue or picnic:

Pear Salad Bowl

Fill the centres of canned or ripe pears with white cream cheese whipped with cream or a light dressing.  A pastry tube may be used to make the filling easier.  Arrange on lettuce; garnish with nuts, cherries, candied ginger, dates, prunes, grapes or watercress.

Chocolate Marble Loaf Cake

1/3 cup shortening
1 cup sugar
1 tsp. vanilla
2 cups sifted cake flour
2 tsp. baking powder
¼ tsp. salt
2/3 cup milk
3 stiff-beaten egg whites
1 1-ounce square unsweetened chocolate, melted
2 tbsp. hot water
¼ tsp. soda

Stir the shortening to soften. Gradually add sugar, and cream together until light and fluffy.  Add vanilla.  Sift flour, baking powder, and salt together 3 times; add to creamed mixture alternately with milk, a small amount at a time.  Beat until smooth after each addition.  Fold in egg whites.  Combine chocolate, water and soda; add to ½ the batter.

Alternate light and dark batters by spoonfuls in paper-lined 10 x 5 x 3 inch loaf pan.  Bake in moderate oven (350 F) about 60 minutes.  Cool and frost with chocolate frosting.
