Ingredients

Pie Crust

·        ½ cup Salted Butter

·        1 ¼ cups all-purpose flour

·        ¼ teaspoon salt

·        3 to 4 Tablespoons cold water

 

Caramel Filling

·        2 cups granulated sugar

·        1/2 cup all purpose flour

·        2 cups milk

·        1/8 teaspoon salt

·        4 large egg yolks beaten

·        Whipped Cream for top if desired

Instructions

Pie Crust

Mix flour and salt until well combined.

Add butter and mix until mixture resembles coarse crumbs.

Continue mixing as you add the water (make sure that the dough does not gather into a single mass)

Wrap dough in plastic wrap and refrigerate for 30 minutes, to make the dough easier to handle.

On a lightly floured surface, roll out the dough until its about 12’’ round.

Place pastry in 9’’ pie dish. Trim away any excess, allowing 1/2 to 1/3 inch to hang over. Fold edges over and crimp.

Caramel Filling

Whisk milk and eggs in a medium sized saucepan. Add flour, salt and 1 cup of sugar. Continue to whisk until the mix is smooth. Put on medium heat and whisk until mixture thickens.

Put one cup of sugar in a skillet. Cook the sugar over medium low heat, stirring with a wooden spoon, until its golden brown and caramelized.

Add the caramelized sugar to the custard mixture and whisk. If the caramel becomes hard, continue to whisk over medium heat until mixture is smooth and thick.

Pour the mixture into the pie crust and put in fridge until chilled and set after 1 or 2 hours.

If desired, top with whipped cream before serving.
