Chocolate caramels are the perfect combination of two delicious flavours and make a wonderful treat for any special occasion.

  • 1 teaspoon butter, softened
  • 1 cup sugar
  • 1-1/2 cups heavy whipping  cream, divided
  • 3/4 cup light corn syrup
  • 2 ounces unsweetened chocolate, chopped

9x5-inch Loaf Pan

1.  Line a 9x5-inch loaf pan with foil, grease the foil with butter and set aside.

2.  In a large saucepan, bring the sugar, corn syrup and chocolate to a boil over medium heat; stir until smooth. Add 1/2 cup cream; cook, stirring constantly, until a candy thermometer reads 234°. Add another 1/2 cup cream; return mixture to 234°. Add the remaining cream; cook to 245°.

3.  Pour into prepared pan. Let stand for 5 hours , until firm. Using foil, lift candy out of pan. Remove foil and using a buttered knife, cut candy into 1-inch squares.

4. Wrap individually in waxed paper and twist the ends.
