P.E.I. Potato Soup

Soup has long been considered a comfort food; a tonic for the sick and even the broken-hearted. Anne had more than her share of troubles even though she brought many of them on herself.
If you are looking for hearty , filling soup to soothe what ails you, look no further than this P.E.I. Potato Soup.

3 to 4 medium potatoes, quartered

3 cups water, boiled

2 cups evaporated milk, undiluted

1/2 cup cheese, grated (Mozzarella recommended)

1 tsp salt

1 tbsp onion, grated

3 tbsp butter

a pinch of pepper

Parsley, chopped (for garnish)


In a covered saucepan, combine the potatoes , boiled water and salt and cook for 25 minutes or until potatoes are tender.

Drain and reserve liquid. Press potatoes through a sieve.

Combine evaporated milk, onion, butter and pepper in a large saucepan. Heat, but do not bring to a boil. Stir in potatoes.

Reheat and add water if necessary. Season to taste.

Stir in grated cheese. Heat until cheese is melted.

Serve with a garnish of parsley.
