P.E.I. Potato Soup

Soup has long been considered a comfort food; a tonic for the sick and even the broken hearted. Anne had more than her share pf troubles despite the fact that she brought many of them on herself.
If you are looking for hearty ,filing soup to sooth what ails you, look no further than this P.E.I. Potato Soup.

3 to 4 medium potatoes, quartered

3 cups water, boiled

2 cups evaporated milk, undiluted

1/2 cup cheese, grated (Mozzarella recommended)

1 tsp salt

1 tbsp onion, grated

3 tbsp butter

a pinch of pepper

Parsley, chopped (for garnish)


In a covered saucepan, combine the potatoes , boiled water and salt and cook for 25 minutes or until potatoes are tender.

Drain and reserve liquid. Press potatoes through a sieve.

Combine evaporated milk, onion, butter and pepper in a large saucepan. Heat, but do not bring to a boil. Stir in potatoes.

Reheat and add water if necessary. Season to taste.

Stir in grated cheese. Heat until cheese is melted.

Serve with a garnish of parsley.
