Raspberry Cordial Popsicles

From steaming hot loose leaf tea to ice cold popsicles, this recipe will show you how to get the most out of your favourite Avonlea tea. Reminiscent of Diana Barry's hilarious experience with "raspberry cordial," this frozen snack is a fun escape from the mundane world.

  • 2 tbsp Raspberry Cordial loose leaf tea
  • 4 cups boiling water
  • 1/3 cup of simple syrup (1 part water to 1 part sugar)
  • 2-4 tbsp fresh lemon juice
  • 6 oz. (1 container) fresh raspberries
  • popsicle molds


1) Measure 2 tbsp Raspberry Cordial loose leaf tea

2) Pour 4 cups of boiling water over tea leaves

3) Add 1/3 cup of simple syrup and let steep in fridge for about 20 minutes

4) In the meantime, make some fresh lemon juice with a lemon squeezer

5) Add 2-4 tbsp of lemon juice to the chilled tea and stir

6) Get your popsicle molds ready by placing a few raspberries in each one

7) Pour the cold tea mixture into the molds and freeze for 4+ hours or overnight

8) Enjoy your Raspberry Cordial popsicles!
