Oatmeal Carrot Cookies

We all know Anne hates the word carrots, but even she wouldn't be able to resist these delicious Oatmeal Carrot Cookies!

Ingredients

o  1/2cup softened butter

o  3/4 cup brown sugar

o  1 cup grated carrot

o  3/4 cup whole wheat white flour or 3/4 cup all purpose flour or 3/4 cup wholewheat flour

o  1 1/4cups old fashioned rolled oats

o  1 large egg

o  1 tsp pure vanilla extract

o  1 tsp ground cinnamon

o  1 tsp baking soda

o  1/4 tsp salt

  Optional:

o  1/2 cup unsweetened shredded coconut

o  1/2 cup chopped walnuts

o  1/2 cup raisins or currants

Instructions

  • Preheat the oven to 350 degrees and line baking sheets with parchment paper.
  • Measure butter and place in a large bowl. Heat in the microwave for 40 seconds or until melted. Add sugar and beat on medium speed until light. Add egg and vanilla and beat on low speed until fully mixed.
  • Add the carrots, ( and coconut, walnuts and raisins if using) to the wet ingredients and stir until combined.
  • Add oats, flour, cinnamon, baking soda and salt. Beat on low speed until just combined. Do not over mix.
  • Scoop about 1 1/2 tablespoonfuls of dough and place on the prepared baking sheets about 2" apart, flattening the dough slightly. Bake for 10-12 minutes until golden, rotating the pans halfway through the baking time.
  • Let cool for 10 minutes, then remove from the pan and cool completely until cookies firm up.
