Ingredients

·      ¼ cup, Jelly (your preferred kind)

·      1 cup, butter (room temperature)

·      1/3 cup, granulated sugar

·      1 ¾ cups, all-purpose flour

·      A pinch of salt

Instructions

Preheat the oven to 350F (180C). Spoon jelly into a bowl and stir until smooth; set aside. Blend the butter and sugar together in a large bowl, until the mixture is light and fluffy. Add flour and salt to butter mixture and blend until a dough is formed.

Pinch off bits of dough and roll into 1-inch balls. Place the balls about 1-inch apart on a baking sheet. Press your fingertip into the centre of each cookie, to create a little well. Fill each well with ¼ tsp of jelly.

Bake the cookies for around 10 minutes. Once cooked, place on a wire rack to cool. Let cool completely before serving, as the jelly will bevery hot.

Makes around 3 dozen cookies. Enjoy!
